A MESSAGE FROM
New Days & Hours starting March 11th, Bistro open Wed-Fri this week. Trying to figure things out, and hoping you can help.

Please understand, we truly appreciate the support we have received from our Amazing friends/Customers. Your continued patronage means Everything to us, believe me!
However, it seems we need to review our business model every month or 2, and after looking at sales so far this year, both in the restaurant And wine & spirits shop, we have decided to change our open nights to Thur-Sat starting March 11th.
Sales so far this year are down about 50% from the same period last year, so we need to try to figure out how to boost Take-out, Indoor dining and Wine & Spirits Sales, if we are to keep this ship afloat.
That being said, we are open to your suggestions, comments & input, if you care to drop us a line, Or an order 🙂

We are Not offering new Features this week, as we are sitting on a fair amount of inventory, and need to watch our budget. But there are still some Great Deals below, so check them out.

We are able top revisit one of the Greatest Hits from last year, since the distributor was able to get their hands on more Basel Cabernet, at a slightly higher price, but still a Great Deal! The Previous Feature is this Beautiful Loire Valley Sauvignon Blanc from Etincelle. Crisps, Dry & Complex, not to mention Quite Affordable! Here is a tasting note, to refresh your memory:

Here is a Chardonnay you might just fall in love with, especially at these prices. Here is a review:
The 2018 Chardonnay is a very pretty, nuanced wine that deftly balances textural richness and vibrancy. Lemon peel, orchard fruit, mint and bright floral notes are finely sculpted in this classy, wonderfully polished Chardonnay from Freemark Abbey.
This wine would normally sell for $35-$40, an it’s worth that price, however we can sell it to you for:

Zinfandel Anyone? Zins & Petite Sirahs have been some of the Most Popular wines this past year, and we have one to offer, that is not only Delicious, but the price is incredibly Tasty Too!

This beauty is made from 100% Mendocino County Pinot Noir from Copain. Here is a tasting not from the winemaker:
Our 2018 Tous Ensemble Rosé of Pinot Noir exudes aromatics of pink grapefruit,
strawberries, white peach and freshly plucked rose petals. With a subtle hue of
pale salmon, this rosé produces notes of melon, fresh cherries, lychee and anise.
Fermented and aged entirely in stainless steel tanks, this wine demonstrates
freshness and a long, mouthwatering finish.

Now here is a Sauvignon Blanc for Sauvignon Blanc Lovers. This is pretty much Brennon Leighton’s Favorite White Varietal, and he does it Right!

Now for you Cabernet Sauvignon Fans, we have 2 to offer this week. The 1st one is the CS Cab from Stoneridge Vineyard, and here are a couple reviews:

“Coming from a terrific site on the Wahluke Slope, the 2014 Cabernet Sauvignon Stoneridge
is 100% Cabernet Sauvignon raised all in French oak. Classic Cabernet notes of plum, cassis,
hoisin sauce and graphite all give way to a full- bodied, concentrated red that has an undeniable
chalky minerality on the finish. It’s impressive today, but it will keep for at least a decade.”

“The 2013 Super Substance Cabernet Sauvignon Stoneridge has a sexy profile and has amble
black currants, licorice, graphite and spice to go with medium to full-bodied richness, ultrafine tannin, solid mid-palate concentration and a great finish. Like all of the wines here, the
winemaking is impeccable and while this can be enjoyed in its youth, it will have 15+ years of
longevity as well.”

And Now, for the weekly Grand Finale, here is a true show stopper! This blend of 45% Cabernet Sauvignon, 30% Cabernet Franc & 25% Merlot is BEAUTIFUL!! Here is what the critics have to say about this wine, and I know, sometimes the wine writers describe thing in a weird way, but they really like the wine 🙂
James Suckling says:
“This is very intense on the nose with asphalt and tar aromas as well as dark fruit and spices. Full-bodied, tannic and rich with lots of freshness and depth. Shows intensity and length. Just coming around. Layered and juicy.
And he gave it 93 points, so that’s good!

Now here is another Beautiful wine, and spectacular package from Michael David. They are on a roll, and have really stepped up their game. This Lodi Chardonnay could easily sell for around $25 to $30, but we can now sell it to you for

And here is a wine from Walla Walla, from Spring Valley. I had never seen this wine in the market previously, Derby Cabernet Sauvignon 2016 (Sharilee Petit Verdot  is Gonzo),  but had an offer from one of my suppliers that I couldn’t resist. This wine normally sell for around $60 but with the deal we got, we can sell it to you for

And for something a bit different, but delicious, none-the-less, here is another one, but this time it is from Italy, and made by a Very good friend, and Amazing Winemaker, Lucio Gomiero, from Vignalta. This Brut Rose is made from a grape called Raboso Friularo, and drinks like a true Champagne Rose.
This wine is a Steal at $30!! Quantities are quite limited however, so it will be 1st come…..

If you don’t take advantage of this feature, you don’t know what you are missing!!! And for the Deal of the Century, and something Incredibly Special, how about a Reserve Cabernet Sauvignon with some bottle age? I mean, some Real Bottle Age, but still drinking Incredibly, especially for the vintage which is 2000 (yes you read that right!). We drank a bottle with Christmas Prime Rib, and it was SOOOOO Gooood!!!

Michael-David (check out their Very Fun Website, which is like a trip to the Circus) https://michaeldavidwinery.com/ was selected as Winery of the Year, and their Freakshow Zin has been a huge success in our quarantine cases and Feature Sales, so we have decided to offer a couple of their other wines, and Great savings!

And for a Really Fun wine, how about some Petite Petit, which is a blend comprised of 85% Petite Sirah and 15% Petit Verdot, Petite Petit is a large, weighty, knock-your-socks-off type of wine! Showcasing aromas of dark fruit, raspberry and fig, this wine is layered with rich flavors of black cherry, cola and light oak on the palate. Dark, full bodied and deeply satisfying!

First Feature this week is a Beautiful Rose from Italy. Fattoria Sardi in Tuscany, made with Organic grapes. This wine would normally sell for $25, however you can have it for

The first one is something we have been using at home for decades, and at the Bistro since we opened. It is made by  my good friend Lucio Gomiero, Owner & Winemaker for Vignalta. This is a delicious Herbed Sea Salt, and will nicely enhance pretty much anything that you use it on. It comes in a 10.5 oz jar, and sells for $12.

And this is another Sweet Deal, on a bottle of Whistle Pig Maple Syrup, which has been aged in Rye Whisky Barrels. It is, of course, Great on Pancakes & Waffles, but I like to use it in my Whisky Sours & Old Fashions, to replace the Simple Syrup, and give it a little more of a Whisky Kick (sssshhh, it’s a secret  🙂

Now this one is Really Different, but Such a Deal. A Hauntingly Delicious Wine. Phantom Chardonnay entices with its rich layers. Green apple and pear transform into spicy flavors of freshly baked apple pie, while barrel fermentation imparts a creamy, luscious mouthfeel. This wine normally sells for between $20 & $22, but here is the deal.

There is also a dropdown menu with separate pages for different spirits, cocktails, wines etc. This part is being added daily, so please be patient, as it is a Lot of work, but it will be worth it 🙂

For indoor dining or dining on the Deck, reservations are highly recommended due to limited seating.
We ask that you please wear a mask when entering the Bistro, and when using the restrooms.

You can make your selections, and call (206) 365-4447 or if it goes to voicemail, please call my cell  (425) 359-5558 at least 30-60 minutes before you want to pick your order up. We now prefer to have you pay when you arrive, so we can run your physical card, rather than entering the #s manually, as our system charges us nearly Double if we do it that way. We will walk your order out to your car. If you want a bottle of wine, to go with your dinner, just let us know what you want, or if you want me to pick something out for you, and we will add that to your bill. We are also offering a number of craft cocktails to go. Just add ice, or stir over ice, and Shazam, you can have a Craft Bistro Cocktail in the comfort of your own home.

Wine Case Sale Details!
I can still assemble a Quarantine A, B or C case for you, or a mixed 6-pack or case of the Feature Wines listed below.

Option A is a $150 case of 12 bottles, valued at about $200-$250, with as close to your mix as possible, with a couple nice bottles valued around $20-$30.
We are no longer able to fill Option A cases with All Red, so a minimum of 3 other bottles (White, Rose or Bubbles) will be included in your case. I can do All Red, If you are fine with a couple duplicates.

Option B is a Nicer $200 case of 12 bottles, valued at about $250-$300, with as close to your mix as possible, with a couple nicer bottles valued around $35-$50.

And we decided to up the offer for those of you looking for a step-up!

Option C is an even Nicer $300 case of 12 bottles, valued at about $350-$400,  with as close to your mix as possible, with a couple nicer bottles valued around $60-$90, some as high as $125.

Just reply to this email with your preferred option A, B or C, and let me know when you would like to pick your case up. I will fill your custom case and it will be ready the same day or next day we are open.
Feel free to tell me if you want a mix of Red, White, Rose or Bubbles, and I will do my best to make up a case especially suited as close as possible to your request.

Going forward, due to our new POS system, we will ask you to bring your credit card and pay for your order of food, wine or spirits, The new system charges us nearly twice the amount of fee, if we key the CC# in manually.
